BAR MANAGER
THE OPPORTUNITY
You’ll be working as part of a fast moving, committed team who individually work across multiple service areas - our Bar, Restaurant, Kitchen and Deli. Our success comes from how well we work as a collective, measured by the seamless way in which everyone combines their efforts to create the professional 45 Queen Street experience in a relaxed, lively and welcoming style.
The home of our organic Tinkture Rose Gin, we run a botanical bar serving classic cocktails with wild, fresh ingredients and homemade syrups - getting us closer to our goal of being entirely organic. We offer a range of natural and low intervention wines, locally brewed beers and cider and organic soft drinks.
Our bar services our restaurant but also runs in the traditional way where people come up for a chat and order a drink.
On a daily basis you will report directly to our Restaurant General Manager and will work closely with 45 Queen Streets Directors Sam and Hannah. You will be a part of our Executive Management Team and advise on the development of the business.
THE ROLE
The purpose of this role is to provide 45 Queen Street customers with an interactive bar experience so they keep on coming back! You will make this happen by extending our bar offer with a menu of distinctively different seasonal drinks that are made from scratch using your recipes and are so perfectly balanced in flavour they will match the culinary excellence of our food. Through your leadership and coaching your team will be confident and thoughtful in guiding customer drinks selection providing a considered and informed bar service at all times.
SALARY: £23,000 - 25,000 per annum (depending on experience)
LOCATION: 45 Queen Street, Penzance, TR18 4BQ
TERM: Full Time, 12 month Fixed Term Contract
REPORTS TO: General Manager and work closely with Sam & Hannah

Main Duties and Responsibilities
Each of the following would be valuable assets for the role and you’ll need to have several of them to do it well, but individually they aren’t essential requirements and where there are gaps in your skills, we can help with training.
Drinks knowledge, ingredients and menus
It goes without saying that you know your classics.
Be passionate about flavour! Know your ingredients and are curious about combinations, tinkering with new recipes and ways of mixing fresh seasonal ingredients, botanicals and pre-preparing syrups, bitters and infusions.
You have an active interest in foraged, wild and forgotten ingredients or at the very least want to learn.
You will create changing seasonal menus - keeping an eye on drinking trends and a plan in place to keep it interesting.
Have a wide knowledge of cocktails, wine and beer - focusing on provenance, preparation, presentation and pairing - you will manage our low intervention wine list and be confident in guiding our diverse customers with their selection.
Be enthusiastic about our beverage offer and how each and every drink has been considered to fit with our 45 Queen Street ethos and values, confidently and engagingly communicating this with customers (and team).
Managing the Bar Day to Day
Offer excellent customer service, placing importance on getting to know our locals and nurturing relationships to increase loyalty and maintain an outstanding reputation for the Bar and 45 Queen Street.
Quality manage beverage preparation and service across the bar team.
Accurately use our ‘Square’ EPOS till system.
Responsible for all Bar areas (including the bar floor) making sure everything is clean and tidy, excellent food&drink hygiene standards are maintained, and are compliant with health and safety procedures.
Minimise waste at every opportunity.
Responsible for checking all equipment is working as it should and report when things are broken.
Sensitively and politely resolve issues with customers and be aware of when to refer complaints on and who to.
Oversea planning for one off events and weddings where a bar service is part of the offer.
Keeping the bar well stocked, with customer presentation in mind.
Responsible for checking new stock in (clearing packaging away), update systems and records, manage and organise paperwork with accuracy and attention to detail.
Lead on communication with our Little Kitchen, Restaurant and Bar teams to ensure seamless collaboration across service areas and that the food offer for the bar is clear to both bar team and customers.
Inventory, Suppliers and Sales
In collaboration with our Business Support Manager, coordinate with vendors to order supplies, as needed.
Track inventory and use sales data to maintain records of daily, weekly and monthly revenue and expenses.
Advise the Business Support Manager and Hannah on sales targets, margins, savings (our point of sale tracking technology provides this) alternative supplier ideas and suggest new products and suppliers for consideration (keeping our ‘source local’ and environmental values as a key factor in decision making).
Managing People
Line manage the Bar Supervisor and support them in their role of managing the bar and bar floor team - including rota’s.
As and when needed you will share your knowledge, train and orientate new employees on wine selections and pairing, recipe preparation, cocktail mixing, presentation, and the perfect pour along with proper use of equipment, food & drink hygiene, health and safety and customer service standards.
Appropriately communicate expectations and key information to staff, delegating tasks to achieve efficiency and excellence in service.
Lead by example maintaining quality standards, compliance, professionalism, supportive team approach and pride in service.
